Hi Damien, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Grew up in France moved to Dallas when 24 years old open my first restaurant in Dallas when I was 26 moved to San Antonio 10 years later open nine restaurants in San Antonio over the years took up the function of honorary consul for France 15 years ago.
Now I’m involved in a startup that build a device for wildfire prevention.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
There is no smooth anything in the restaurant business. It’s a chaotic process that you try to handle along the way.. my father steered me towards it at a young age because of his love of cooking in a restaurant, but he was an architect. Weathering economical crashes and crazy situations like the Covid days. The analogy would be like being caught in a hurricane on a boat that last months or years sometime. .
Nonetheless, San Antonio is a town similar to the one I grew up in France and I have always been comfortable here mostly because of its incredible people. I have made lasting friendships and met tons of wonderful human beings through my journey and that is my favorite part of the crazy business..
Now there is another crisis brewing, and it’s the wildfire threat ever increasing. I have been dealing with flames on the stove and fire suppression above throughout my career. So my new interest with wildfire prevention and helping control the terrible destruction he bringsfeels appropriate.!

Out of the need to decorate my walls opening my first restaurant I could not afford to buy stuff so I started painting my own. Not only did I find a lot of enjoyment out of it, but as people along the way, purchased the artwork I painted more and more giving me a stress outlet. Today I look forward to space on the walls so I can paint something new. .

The city sold and its people are wide, attracted me and still is my favorite part . Here you can find a little bit of the French “joie de vivre because of the citiy’s slower Pace. ..
Great place to raise kids lower cost of living and an awesome very French basketball team .!
Paradoxically , it’s the city’s slower pace of development makes business more challenging .
