Today we’d like to introduce you to Adam Bylicki.
Hi Adam, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstories with our readers?
I retired from the Army in 2018 after a career that allowed me a plethora of experience. From airborne infantry to humanitarian disaster relief, and spending five years as a diplomat.
I immediately went into a contracting job that had me doing 90 days in Baghdad and sixty at home. I have two daughters (age 9, and 11). Being gone for three months at a time was too much. I applied for a few jobs and nothing was planned out.
Finally, I decided to do what had always wanted to do, which was to cook for a living.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
We have been fortunate enough to have had some really good reviews early on, from some large outlets. The growing pains that accompanied those reviews were extremely challenging at the time. I had never cooked professionally and my wife is a full-time real estate agent.
We went from running the truck together, to that not being sustainable almost overnight. We’ve had to deal with the struggles of hiring and keeping staff. The logistics of having to maintain larger inventory and being able to trust others to produce and maintain our standard. It has been a wild ride and one that I hope keeps ongoing.
Alright, so let’s switch gears a bit and talk business. What should we know?
We are a tiny food trailer that packs a big punch. We are very detailed oriented and take a huge amount of pride in the product we put out. We specialize in lobster rolls. This is something that I thought should be more accessible to people than it currently is. I grew up in Massachusetts where some of the best seafood on planet earth comes from.
We wanted to bring that down here but, our way. We have the traditional rolls and a couple of others that we thought were a fun way to do something different. We bake all of our bread fresh daily which sets us apart from all others. I always hated when places would charge $20 and up for a sandwich just to serve it on a store-bought piece of bread.
