Life & Work with Jessica Sanchez of San Antonio

Today we’d like to introduce you to Jessica Sanchez.

Hi Jessica, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Kairos Coffee Catering started with our wedding in Chicago. We are both coffee drinkers, so naturally we wanted coffee to be featured on our big day. We hired a small coffee vendor to serve lattes at our wedding and our guests could not keep quiet about it. Immediately after our wedding, we had a strong desire to someday start something similar at the right time and place. After two years of living in Chicago, our desire to start a small coffee catering business grew. Through prayer, we began to feel it was time to move back to Gabriel’s hometown, Mcallen, Texas. So we packed up! On our way driving down to Texas, we were praying and worshipping God. We felt the Lord speak to us, “Now is the time.”. We understood this was the time, the season, to start our business! We named it “Kairos”, which is a Greek word meaning, “the appointed time of God”. Immediately upon unpacking in Texas, we began our coffee cart! At the time, we were the only ones offering specialty coffee drinks at private events. Little by little, our name got out and our client list grew. After 2 years, Kairos became our family’s full time income. Our family continued to grow too! We now have four daughters and run this business as a couple and of course our kid’s like to help out too! Throughought the years our team as grown too. We know how 4 fully running coffee carts, 10 baristas, and lots of events all over South Texas! We absolutely love the “event culture” of the RGV from wedding to XV’s. We are honored to bring delicious coffee drinks to these special events!

We all face challenges, but looking back would you describe it as a relatively smooth road?
We had a very humble beginning, and we did everything ourselves. From building the cart out of an old piece of furniture we had, to all-nighters answering admin related emails. A few years in, I (Jessica) began to burn out as we also had small children. It took faith to reach out and hire help and to share the workload with other. Well, the amazing team we hired ended up being the best thing we could have done!

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
Something most people don’t know about us, is we roast all our own beans. So you are getting the freshest coffee possible! Our clients also love our customizable cart designs, custom stickered and stamped cups, and even logos printed on the surface of the latte with coffee flavored edible ink. Our most requested drink is our “Kairos Special” which includes espresso, whole milk, honey, cinnamon, and coconut!

What was your favorite childhood memory?
Favorite childhood memory, is time spent with my dad, who passed away in 2023. He was a man who loved to share is passions with his kids like ice skating, cooking, and missions trips. He gave me a fighting spirit that doesn’t back down from a challenge!

  • We charge by the hour, not per cup. Our hourly rate is based on the size of your event!
