Hi TJ, thanks for joining us today. We’d love for you to start by introducing yourself.
My name is TJ Coffey, and I’m the owner of Signature Springs Farm here in San Antonio, Texas. I didn’t grow up farming. In fact, I grew up a city kid. Most of my life was spent working in the restaurant world. I even owned a food truck in Phoenix, Arizona for seven years before moving to Texas.
I started Signature Springs Farm in the spring of 2021 because I wanted to do something different with my life. I wanted to be part of the process of producing real food. I also wanted my daughter to grow up around animals, in a more natural environment. That vision turned into this farm.
We raise pasture-raised chickens, turkeys, pigs, and grass-finished cattle. We follow regenerative farming practices, which means we take care of the land while raising animals the way nature intended. No chemicals, no GMOs, no soy feed, and no antibiotics. Our animals live outside on grass and are moved often to keep the land and animals healthy.
As our farm grew, I saw more people looking for natural products—not just for their food, but for their skin. That’s when we started making tallow-based skincare. We use grass-fed beef tallow from our animals and mix it with simple, clean ingredients like jojoba oil, beeswax, and magnesium. We make everything in small batches right here on the farm. We want to use as much of the animal as possible, and this is one way we do that.
Today, we sell meats, eggs, and skincare products through farmers markets, subscriptions, and local pickup. Most of our customers find us through word of mouth or meeting us in person at markets. We’ve kept things simple and personal.
My goal is to get our tallow products into more local stores around San Antonio and to keep growing our presence at farmers markets. I’d also love to open the farm to more people—maybe one day having farm stays, field trips, or even a farm-to-table restaurant. We already host field trips for elementary students a few times a year, and we love having people come out and see how we do things.
What I enjoy most is spending my days outside, working with the animals, and watching my daughter grow up in this environment. I’ve always been an entrepreneur at heart, but this is the first time I’ve felt truly connected to the work I do.
I’m lucky to have help from some great people. My business partner Kyle helps manage production, and Jean Soto leads our marketing and sales efforts. Together, we’re building something meaningful for our community—something real.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Being a farmer is a learning process in itself. I learn as I go, educate myself, and make the best decisions possible to adhere to my values as a regenerative farmer. I stick to raising my animals ethically and making products that I believe in for local SATX families. There are just lessons to learn on this journey and improvements to make as you learn.
We’ve been impressed with Signature Springs Farm, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Signature Springs Farm is a family-run regenerative farm just outside San Antonio, founded by me in spring 2021. We raise pasture-raised chickens, turkeys, pigs, and grass-finished cattle—always using non-GMO, soy-free feed, with no chemicals or antibiotics. We believe in transparent, ethical farming and providing local families access to nutrient-dense, clean meat and eggs—and now handcrafted skincare—right from our fields to their tables.
We specialize in two things:
Regenerative pasture-raised meats and eggs—offered via monthly CSA bundles and individual cuts.
Small-batch tallow-based skincare—made from grass-finished beef fat and simple, skin-loving ingredients like jojoba oil and beeswax.
Our customers know us for honest, finely crafted products that reflect natural practices and deep care.
What sets you apart from others?
We use regenerative practices that protect and enrich the land, moving livestock in rotation to boost soil health—no chemicals or synthetic inputs. We ethically process them when it is time to make our next batch of food. It is important to us to treat our animals with respect. Our tallow products are made directly from our grassfed cows, which we have a lot of pride in as we make small hand batches of self care items. It is a beautiful ritual to gain so much from farming and use as much from our animals as possible.
We offer a farm-to-skin extension of our food mission: tallow skincare that extends the value of our ethically raised beef and meets the growing desire for clean, transparent beauty products. We use few ingredients you can pronounce and trust.
What are you most proud of, brand-wise?
I’m most proud that everything we do—from the way we raise our animals to how we craft our skincare—is rooted in honesty, sustainability, and family values. Seeing customers trust us with their food and skin care is a meaningful testament to the farm’s mission.

Any advice for finding a mentor or networking in general?
I have always considered myself an entrepreneur. I grew up a city kid but wanted to get into farming. I had to LEARN every step of the way and not be afraid to fail. You also have to believe in what you do strongly and chase that dream.
