Community Highlights: Meet Lance & Boo Eaker of Eaker Barbecue

Today we’d like to introduce you to Lance & Boo Eaker.

Hi Lance & Boo, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Lance got obsessed with barbecue so much that he decided to leave his stable IT job in 2017 to start a food truck with the goal of brick and mortar. The plan is his wife Boo would continue to work as a baby and toddler clothes designer. Unfortunately (or unfortunately) shortly after Lance put in his notice, Boo was unexpectedly laid off, the company should had work for then sold less than six months after. So they were all in. As they waited to have their food truck built they would sell sandwiches and meat by the pound at farmers markets. On February 4th of 2018 they launched their food truck. The truck became popular as it served at big venues such as The Truck Yard, Kirby Ice House, Karbach Brewer and even Houston Texans games. Then covid hit and everything came to a screeching halt. As bars and event venues were shot down, they were regulated to their neighborhood selling in a parking lot of a church. The neighbors were really supportive but the lowered revenue was not sustainable. Their house was under a forbearance plan and the huge bill was about to come but no funds to cover it. They decided it was time to pivot, so they sold their house and found themselves in Fredericksburg to open a brick and mortar. Boo bing Korean they had a few Korean inspired menu items that Lance didn’t think would work in the small German town. Well, Lance was wrong. The Korean items were a huge hit and really complimented Lance’s smoked meats. Shortly after they opened the restaurant they made the coveted Texas Monthly Top 50 list which was followed by numerous local, state, and national print media as well as TV shows.

We all face challenges, but looking back would you describe it as a relatively smooth road?

Texas Barbecue with a Korean compliment. Traditional Texas BBQ scratch made offerings including Texas raised A4 Akaushi Wagyu brisket, house made sausage and more. The twist of Korean in their Gochujang Ribs, house made Kimchi, and Korean Cucumber Salad.

Can you talk to us a bit about the role of luck?
Very fortunate to find the property we are in and were able to execute the purchase of.
