Community Highlights: Meet Kei Wall of Kustom Catering

Today we’d like to introduce you to Kei Wall.

Hi Kei, thanks for joining us today. We’d love for you to start by introducing yourself.
I started with the idea while in culinary school and established my business in June 2018. I acquired my food trailer in December 2018 and sold my first sandwich in April 2019. I started with 6 sandwiches and today I have about 23 sandwiches which I rotate on a weekly basis.

I started working with the downtown mobile vendors in June 2019 and have been working the downtown circuit ever since. I have recently started working on Randolph Air Force Base and will now make this spot my everyday spot but will continue to work the downtown area from time to time.

We all face challenges, but looking back would you describe it as a relatively smooth road?
No, it was not always a smooth road, my struggle was the concept of selling International foods. The idea took a little time to catch on as San Antonio was so used to taco trucks.

Every time I would set up, customers would ask me if I sell tacos! Once people started tasting my sandwiches, the concept slowly started picking up momentum, when people see my food trailer today, they know what they’re going to get, hot and delicious sandwiches.

As you know, we’re big fans of Kustom Catering LLC. For our readers who might not be as familiar what can you tell them about the brand?
The name of my food trailer is KC’s Global Subs, I specialize in offering delicious sandwiches from different parts of the country and world. What sets me apart from most food trucks is what I have to offer the public, nobody sells the different types of food variety that I sell.

Sure, there may be a food truck or trailer that sells a Philly Cheesesteak or a Chicken Sandwich or even a Fish Sandwich but nothing like what I create and sell. I am most proud of my Gyros because of my unique tzatziki sauce that is like no other. Another top-selling sandwich is my KC’s Delight, named so because the sauce that I created is so uniquely mine! Basically, all my sandwiches are uniquely my own concoction.

Who else deserves credit in your story?
I have been doing this on my own, all my recipes have been inspired by my own taste buds and with the assistance of my eldest son as my taste tester, it is solely my own creations. I would get an idea and test it several times before I perfect it then I present it to my customers.
