Hi Whitney, it’s an honor to have you on the platform. Thanks for sharing your story with us – to start, maybe you can share some of your backstories with our readers.
Charcuterie Outfitters was born in January 2022 out of love for food and all things outdoors. I’ve loved playing with food since I was a little girl watching my mom make edible art in the kitchen. She taught me that nothing brings people together like food, and the best memories are made around the table. Fast forward to Covid when “Charcuterie” started trending. I played around as a hobby but never intended to start a business – that is, until the Summer of 2021. Living in New Braunfels, we always looked for creative ways to take snacks to the river, but they would always get soggy. One day I packed meat, cheese, and crackers in a waterproof tackle box, and the rest is history! Being an avid lover of the outdoors, this was the perfect fusion of my two passions. We have since branched out to offer the “Traditional” Charcuterie elements but are most well known for our floating snack boxes. In February 2023, we opened our first retail location inside Das Nutrition Haus, where you can shop Wild Game Meats, Bacon Jams, Infused honey, and apparel. We are always looking for new and relevant ways to branch out and help our community, and we are excited about the future!
You wouldn’t say it’s been obstacle free, but so far would you say the journey has been fairly smooth?
This journey has been anything but smooth. It’s one of the hardest things I’ve done. Opening any business during an economic downturn is a struggle, especially a food business. Charcuterie, by nature, is supposed to look simple. Most people only see some of the time and creativity that go into the final product, and that’s how we want to keep it. That’s what makes it so special. On top of economic struggles, I have had to grow into this role. It has been a steep learning curve understanding the different hats we wear as business owners – from bookkeeping to website creation and social media management – all on top of refining my craft, learning the best techniques, and customizing each order. Each day is a new challenge, but it’s been an amazing ride for the most part!
Can you tell our readers more about what you do and what you think sets you apart from others?
Technically speaking, I am a licensed caterer specializing in Deli Meats & Specialty Cheeses, but all my friends lovingly refer to me as the “Snack Queen.” I offer everything from Kid’s Boxes to Gourmet Wild Game. I’m known for putting an “Outdoor Spin” on something traditionally known to be very luxurious. Instead of the usual Fig Jam & Honey, I use Bacon Jam and Hickory Smoke Infused Honey to give a unique variation to the traditional Meat & Cheese boards. All of the Boxes that I use float, which makes them the perfect snack vessel for floating the river, Fishing, or even placing down in your cooler for a road trip! We also make a S’mores Box which is perfect for camping!
The crisis has affected us all in different ways. How has it affected you, and are any important lessons or epiphanies you can share with us?
I wasn’t personally in business during the brunt of Covid-19, but I certainly learned the value of spending time with loved ones and feeling a sense of community. I love this business so much because I can be a part of people’s memories. People gather around something I create – that’s so cool! It’s something that I took for granted before the Pandemic but never will again.
