Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I am Joel Panchevre, owner of Thirsty Aztec. The company behind the business was formed in 2016, and we opened Thirsty Aztec on the River Walk in 2017. From the beginning, the idea was focused: give people a fun, fast way to enjoy a frozen margarita, beer, cocktail or nonalcoholic drink without having to stop their day and sit down for a full meal.
Our location is a walk-up window at 200 River Walk. Over time, we moved beyond a basic drink menu and built an experience around bold flavors, layered frozen drinks and large-format creations. The Amiki, our multi-flavor frozen margarita tower, became a signature item. We have continued adding crowd favorites such as micheladas and rotating frozen flavors while keeping the service simple: walk up, grab a sealed to-go drink and keep exploring San Antonio.
Today, I am proud that Thirsty Aztec is still independently owned and operating in such a special place. We serve visitors from all over the world, but we also want locals to feel that we are part of their River Walk. Nearly a decade in, I am still learning, improving the menu and systems, and looking for ways to make the business more useful and memorable for every person who stops by.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has definitely not been a smooth road. Being on the River Walk is an incredible opportunity, but it also means the business is closely tied to tourism, weather, downtown events and seasonality. A busy Saturday can test every part of the operation at once, while a slow stretch forces you to be disciplined about costs and planning.
The pandemic was an extreme example of that uncertainty. Travel and downtown foot traffic changed dramatically, and a business built around people exploring the River Walk had to adapt quickly. Beyond that, there are the daily challenges every independent bar faces: finding and retaining good people, keeping frozen-drink equipment reliable, managing inventory, maintaining consistency during high-volume rushes and handling rising operating costs.
Those experiences taught me to pay attention to the numbers, build simpler systems and never assume that a good location will do the work for you. We keep improving training, suppliers, recipes and service so the guest experience stays consistent. I have also learned that resilience is less about one big decision and more about making a lot of small, responsible decisions every day.

Thirsty Aztec is an independently owned walk-up frozen drink bar at 200 River Walk in downtown San Antonio. We specialize in made-in-house frozen margaritas, cocktails, beer, micheladas and nonalcoholic frozen options served in sealed to-go cups. There are no reservations or table service. Guests can walk up, order quickly and keep exploring the River Walk.
What sets us apart is the format and personality. We focus on bold flavors, bright presentation and drinks that feel like part of a San Antonio trip. Our signature Amiki layers mango, piña colada, strawberry and blue razz frozen margaritas into a tower with optional shooters. We also serve large-format drinks such as Da Aztec and the Wemby-Rita, plus classics and rotating flavors. Our homemade michelada mix is another favorite.
I am most proud that we have stayed independent since 2017 while continuing to evolve. We are in one of the most recognized visitor destinations in Texas, but we still operate like a hands-on local business. We listen to guests, test new flavors, train our team and improve the details. We want readers to know that Thirsty Aztec is casual and easy to visit: no reservation, just a friendly River Walk stop for locals, tourists, groups and anyone who wants a cold drink while they explore.
What makes you happy?
My family makes me happy, first. Running a business can take over every hour if you let it, so time with them keeps everything in perspective. I also like building things and solving problems. There is a real satisfaction in taking an idea, whether it is a new drink or a better system for the team, and making it work. At Thirsty Aztec, seeing someone excited about their drink or watching an employee grow into more responsibility makes the long days worth it.
