Today we’d like to introduce you to Jenny Irwin.
Hi Jenny , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
The story of The Bunker. David and I are first and last loves. David was born and raised in Spring, Texas, with deep Texas roots. He moved to Arizona in 1989, and we met at the end of our senior year in high school. David attended Arizona State University, and I attended Scottsdale Community College. We went our separate ways for 30 years. We reconnected after marriages and children later. David is an Army Veteran who served multiple overseas tours, including Baghdad, Iraq. He then attended St. Mary’s School of Law and is still in active practice in San Antonio. I was in the service industry for 30 years and decided it was time to fulfill my lifelong vision of running my own speakeasy. We took over the Bunker on March 1st, and we have been running since that date. Being a bar owner is everything I expected, and then some. To own the Bunker, on Houston Street, in the middle of restaurant row, in a city with such a rich history and culture, is a dream come true. The opportunity to serve amazing cocktails in a traditional speakeasy off the River Walk in San Antonio, literally in the basement under Bohannans and the Palms, is such a gift, and we love making friends over a Bunker cocktail.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The challenges of running a business are always present, and as a bar owner, we have learned so much over the last 5 months; we will take these lessons and make the Bunker the best-kept secret underground in San Antonio.
We’ve been impressed with The Bunker Mixology, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
The Bunker Mixology is a hidden speakeasy underneath Houston St in the 100+ year-old Schaum Building. We are known for great artwork, mixology cocktails that match the art, and an eccentric hallway. The Bunker was opened in 2023 and purchased by David and Jenny Irwin in early 2026. We are reimagining the Bunker’s style and vibe into a hidden gem that plays live music every Friday and Saturday night. We offer all military personnel happy hour every day, along with downtown and industry discounts.
Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
The stories told and the bonds formed over a whisky are unbreakable and must be retold. We are just fortunate to have shared many stories and formed countless bonds. The service industry, and more specifically the bar industry, has been a part of my life since I was 19 years old. There are so many people and mentors who have touched our lives and helped lead us here today, and even today, we are blessed in so many ways to have such amazing family and friends to support the Bunker and us.
