Conversations with Carol Everett

Today we’d like to introduce you to Carol Everett.

Hi Carol, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
If someone had told me years ago that one day I would become the founder of a healthy dessert business and the author of a cookbook, I probably would have smiled and simply said, “If it’s God’s will.”

My journey has never been about chasing success—it has always been about following Jesus Christ.

More than 29 years ago, God began establishing my spiritual foundation at Agape Apostolic Faith Assembly Church. It was there that I learned to trust Him completely, walk by faith, remain humble, and serve others with love. Those teachings continue to guide every decision I make today.

For 32 years, I faithfully served others in the medical field. Caring for people was more than a career—it was a calling. Every patient, every family, and every experience taught me compassion, patience, excellence, and the importance of putting others before myself.

When I retired, I believed one chapter of my life had ended. Instead, God was opening the door to an entirely new assignment.

He placed a vision in my heart that healthy desserts could be made without sacrificing quality, flavor, or integrity. That vision became Carol’s Organic Desserts.

From the very beginning, I made a commitment that I would never compromise the quality of my products. Every dessert is handcrafted with love using clean, organic, premium ingredients—not generic ingredients. Whether Keto, Vegan, Gluten-Free, Sugar-Free, Paleo, Low-Carb, or Organic Regular desserts, every recipe reflects my desire to help people enjoy delicious desserts made with excellence and care.

This journey has required faith, perseverance, and complete dependence on God. There were challenges that tested my strength, but each obstacle became another opportunity to witness God’s faithfulness. Time after time, He reminded me that when He calls someone to a purpose, He also provides everything needed to fulfill it.

I am deeply grateful for my husband, Wellington Everett II, whose love, encouragement, and unwavering support have strengthened me throughout this journey. I also thank my family, loyal customers, event coordinators, local businesses, and the great State of Texas for believing in my vision and supporting Carol’s Organic Desserts. Your kindness has helped turn a dream into a growing business.

Today, I stand with a heart full of gratitude as I prepare to share my recipes through my cookbook and continue serving others through my business. My hope is that every dessert, every recipe, and every opportunity points people toward excellence, healthier living, and above all, the goodness and faithfulness of God.

If my story inspires even one person to trust God’s plan, remain faithful through difficult seasons, and never give up on the dream He has placed within their heart, then I know my journey has served a greater purpose.

I can truly say that it was Jesus Christ alone who lifted me. He is the Author of my story, the strength behind every accomplishment, and the foundation upon which I stand.

“I can do all things through Christ which strengtheneth me.” — Philippians 4:13
“Being confident of this every thing, that he which hath begun a good work in me will perform it.”- Philippians 1:6

To God be all the glory—yesterday, today, and forever.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Has It Been a Smooth Road?

No, it has not been a smooth road. Like many entrepreneurs, I have faced challenges, setbacks, and moments that tested my faith, patience, and perseverance. Building a business from the ground up requires countless hours of learning, planning, investing, and trusting God even when the path ahead is unclear.

One of my greatest challenges has been staying true to my commitment to quality. I made the decision from the beginning that I would never use generic ingredients or compromise the integrity of my products. Instead, I choose clean, organic, premium ingredients, even when they cost more and require additional time and effort. For me, excellence and the health of my customers have always been more important than taking shortcuts.

Another challenge has been introducing healthier desserts to people who are accustomed to traditional recipes. Educating customers about the value of wholesome ingredients and healthier alternatives has taken patience, consistency, and a willingness to let my products speak for themselves.

There have also been moments of uncertainty, long hours, and obstacles that could have caused me to give up. But every challenge strengthened my faith and reminded me that God is faithful to those who trust Him. He has opened doors, provided opportunities, and surrounded me with loyal customers, event coordinators, businesses, and the great State of Texas.

Looking back, I realize that every obstacle became part of my testimony. Those experiences taught me perseverance, strengthened my character, and prepared me for the purpose God had planned for my life. Today, I can honestly say that every challenge was worth it because it brought me closer to God and helped shape Carol’s Organic Desserts into what it is today.

I believe that success is not measured by how easy the journey has been, but by remaining faithful, refusing to give up, and giving God all the glory every step of the way.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
My professional journey has always been centered on serving others. I spent 32 years working in the medical field, where I learned the importance of compassion, dedication, excellence, and treating every person with dignity and respect. Those experiences shaped my work ethic and strengthened my desire to make a positive difference in people’s lives.

After retiring, I felt God leading me into a new season of service. What began as a passion for creating healthier desserts soon grew into Carol’s Organic Desserts. I founded my business with one clear purpose: to offer handcrafted desserts made with clean, organic, premium ingredients that people can feel good about enjoying.

Today, I specialize in Keto, Vegan, Gluten-Free, Sugar-Free, Paleo, Low-Carb, Vegan Gluten-Free, and Organic Regular desserts. Every recipe reflects my commitment to quality, health, and excellence. I choose premium ingredients over generic alternatives because I believe my customers deserve the very best.

In addition to operating my business, I am also the author of an upcoming cookbook, where I will share recipes, knowledge, and encouragement with families who want healthier dessert options. My goal is not only to provide delicious desserts but also to educate and inspire others to embrace wholesome ingredients and healthier choices.

Throughout every stage of my career—from the medical field to entrepreneurship—my mission has remained the same: to serve others with integrity, compassion, and excellence while giving all the glory to Jesus Christ. I believe that every opportunity I have received is a blessing from God, and I am committed to using my gifts to encourage, uplift, and make a meaningful difference in the lives of others.

Let’s talk about our city – what do you love? What do you not love?
One of the things I love most about our city and the great State of Texas is the genuine sense of community, hospitality, and support for small businesses. From the very beginning of my journey with Carol’s Organic Desserts, I have been blessed by loyal customers, event coordinators, local businesses, and organizations that have welcomed and encouraged us. Their kindness and support have played a significant role in helping my business grow, and I will always be grateful.

I also appreciate that Texas is a place where faith, family, hard work, and entrepreneurship are valued. Those values reflect who I am and have given me the opportunity to build a business that is rooted in integrity, excellence, and service to others.

If there is one thing I would love to see continue to grow, it would be even greater awareness of healthy eating and stronger support for locally owned small businesses throughout our city and across the great State of Texas. I believe that by educating people about the benefits of clean, organic, high-quality ingredients and supporting local entrepreneurs, we can build healthier families, stronger communities, and an even brighter future.

Overall, I consider it a true blessing to live, work, and serve in both our wonderful city and the great State of Texas. Texas has embraced my vision, encouraged my dream, and provided opportunities that I will never take for granted. It is my privilege to continue giving back through Carol’s Organic Desserts by serving others with excellence, compassion, and a heart of gratitude.

Above all, I thank Jesus Christ for leading my steps and opening the doors that have allowed me to serve this community and the great State of Texas. To God be all the glory.
