Hi Mollie, we’d love for you to start by introducing yourself.
“I was a lifelong vegetarian and built my career as a vegan chef in Los Angeles, opening several Sage Vegan Bistro restaurants and even starting a farm in California to deal with my restaurants’ food waste. Once I got on the land, I realized that all truly organic farming depends on animals—on manure, on grazing, on that dance between life and death in the soil—and it shattered my old belief that cows were ‘the problem.’ At the same time, COVID regulations and red tape in California made it nearly impossible to run my businesses or raise my kids the way I believed in. So we sold the California farm, closed the restaurants, and moved to the Texas Hill Country. Now I’m in Bandera, Texas, where my husband and I raise cattle and other livestock at Sovereignty Ranch and I cook at our on-ranch restaurant, The Barn, serving meat that actually regenerates the land it comes from.”
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Along the way, I tried to change my Vegan restaurants to regenerative meat from Vegan, the world, the wiggans. The press did not respond. Kindly.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
I am a Farmer, a Chef, a mother, and an author. I have a daily column in a large newspaper. I have a book out right now. I have a 250 acre ranch in Texas with it on Farm restaurant where I am the executive chef, my commitment is to remind people that we are tied to the land. We cannot Serber ourselves from the soil, our faith, and the Soils fate are in.
In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
we need desperate intervention by the people we are on a full on agrarian collapse real Food is at a risk of disappearing. We have Lost 170,000 farms in the last eight years and it seems like almost nobody is paying attention.
