The Mermaid Café, an entirely gluten-free coffee shop with a mission of inclusion, is proud to announce its official grand opening! Address: 14415 Blanco Rd, Ste 110, San Antonio, TX 78216. Founded by Leah Meyer and her family, we proudly stand as one of San Antonio’s first cafés dedicated to employing people with disabilities in every role. From baristas to bakers, each team member brings unique talents and heart to their work, creating an experience you can taste in every sip and feel in every smile.

At The Mermaid Café, our mission is to create meaningful employment opportunities that empower individuals with disabilities to thrive in every role, from brewing coffee to baking and customer care. We believe in unlocking potential through dignity, confidence, and community.
More than a workplace, we are a platform for growth and belonging where all team members’ unique abilities are celebrated, and their contributions inspire us all. Through this, we are not just serving coffee; we are building a movement that proves inclusion creates strength, joy, and lasting impact.
Leah, our founder, has dreamed of owning a restaurant since she was a little girl. That dream first became clear to her parents, Drew and Karen Meyer, one evening when they found toddler Leah in the kitchen cracking a dozen eggs on the floor. When they asked what she was doing, she simply replied, “I’m baking cookies!” It was in that moment that they knew she would be a baker someday. What started as a childhood love of baking grew into a YouTube channel called Cooking with Leah, and eventually blossomed into the fulfillment of her biggest dream: opening The Mermaid Café.
Today, that dream is a reality: a community café that celebrates the value and contributions of people of all abilities, proving that everyone belongs and everyone can make a difference.
At The Mermaid Café, doing things differently means more than just serving great coffee. Our entire menu is 100 percent gluten-free, crafted in a brand-new kitchen that has never handled gluten-containing ingredients. While we are not a certified gluten-free facility, our team is trained to take gluten allergies seriously, going above and beyond to create a safe and welcoming experience for everyone.
This commitment reflects our broader mission to build a space where diversity is celebrated, contributions are valued, and every visit supports a cause that truly matters. Many of our recipes are treasured family favorites, lovingly passed down through three generations, bringing both tradition and care to every bite.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Opening The Mermaid Café has been a dream in the making for over 20 years. One of the biggest challenges was finding the right location; one that would support a thriving business while also being accessible and accommodating for our employees & guests with disabilities. After nearly a year of searching, the owners found a space that felt like the perfect fit.

The Mermaid Café is a 100% gluten-free, disabilities-first coffee shop located in San Antonio, Texas. We specialize in scratch-made baked goods, specialty coffee, and heartfelt hospitality; all served by an incredible team that includes individuals of all abilities.
Our mission is to provide meaningful employment opportunities to adults with disabilities in every area of our café, from baking and brewing to customer service. We believe in the power of inclusion and in creating a space where everyone is welcomed, valued, and celebrated for exactly who they are. We’re most proud of the team behind the counter. Our staff members bring joy, dedication, and authenticity to their work every single day. Watching them thrive, grow in confidence, and connect with our guests is the most rewarding part of what we do. We set out to create a team made up of at least 70% individuals with disabilities, and we’re proud to have exceeded that with 80% of our current staff.
What sets us apart is that inclusion isn’t a side initiative; it’s the heart of our business. From our fully gluten-free kitchen to our hiring model and community partnerships, everything we do is rooted in the belief that diversity strengthens us and that meaningful work should be accessible to everyone. The Mermaid Café is more than just a coffee shop, it’s a movement, a family, and a dream come true.
We’d love to hear about how you think about risk taking?
Opening the café also required major personal and professional sacrifices. Drew, one of our owners, left his career to work at the café full-time. Karen, the other owner, continues to run her practice but spends three days a week, and many evenings, baking and preparing at the café.
It was a leap of faith in many ways, but one driven by passion and purpose. The café is not just a business; it’s a dream come true for their daughter, Leah, and a place where meaningful employment and belonging are at the heart of everything. The owners are deeply proud of the hope and opportunity The Mermaid Café offers to young adults with disabilities, and to the families who walk through our doors every day.
