Hi Brittney, so excited to have you with us today. What can you tell us about your story?
At Cosmic Cakery every Cake has a story, one that is inspired by stars, dreams and a sprinkle of magic. I’m Brittney, the proud woman operator and owner behind this out-of-this-world cake shop, and I’d like to take you on a little journey of how Cosmic Cakery came to be. Growing up, I was always fascinated by the universe. The stars, planets, and galaxies weren’t just distant specks in the sky to me—they were endless possibilities, endless creativity waiting to be explored. Baking was a creative outlet for me from an early age. While other kids drew pictures or wrote stories, I found joy in crafting the perfect cake—in my EasyBake oven. But it wasn’t until I was an adult that I understood the true connection between baking and the universe. There’s something ethereal about watching ingredients come together—flour, sugar, butter, and eggs transforming into something truly magical. It’s like watching a galaxy form, with each star (or sprinkle of sugar) falling into place, creating something greater than the sum of its parts.
It truly started by someone saying it could not be done. I was challenged with making a cake that a friend believed I could not achieve, It was a Lego cake for her son. I dove into the project headfirst. I started by researching techniques for creating a cake that was not only visually impressive but also delicious. The challenge was to make the Lego blocks look realistic, but also ensure that the cake tasted amazing. I spent hours crafting each piece, carving and shaping the cake to mimic the Lego blocks, and using vibrant colors to make everything pop. When I finally finished, I was in awe of the result. It looked exactly like a giant Lego creation—but it also tasted like a piece of heaven, with layers of moist chocolate cake and rich buttercream. The cake was the hit of the party and all doubts my friend had were quickly restored. If you’re ever told that something is impossible, remember: sometimes the best things in life are the ones that others say can’t be done. You just have to believe in the stars—and in yourself—enough to make it happen.
Word began to spread as I continued to make cakes for friends and family. Looking back, I realize that the Lego cake was more than just a challenge —it was the foundation of Cosmic Cakery. It taught me that the smallest ideas could lead to the greatest creations. It showed me that the best way to bring joy to others was to put my heart into every single cake. And most importantly, it gave me the confidence to follow my dream, even when the road ahead seemed uncertain. I want everyone to know that each cake at Cosmic Cakery is made with the same love and dedication that went into that very first Lego cake. From building blocks to bakeries, dreams really do come true—one cake at a time.
From that day forward, I knew that my passion for baking could not be contained to the walls of a kitchen in my spare time. I wanted to create cakes that not only looked amazing but also told a story, sparked creativity, and made people feel something special.
I had a full-time job at a veterinary clinic and was a mother to a toddler at the time. I would come home and bake out of my kitchen way into the early morning hours. I entered into cake competitions and started doing the Helotes Market Days on the First Saturday of every month. I did this for two years but it quickly started weighing on me, I had to make a choice quit my full time job and dive into cakes, or give up my dream of owning a bakery.
So, I took a leap of faith. I traded my stability for the unknown, leaving behind the conventional path I had been on and taking the risk of pursuing my passion for baking full-time. With a mixture of excitement and nerves, I opened Cosmic Cakery in a small storefront on Olmos Dr. the summer of 2013, determined to prove that dreams can come true—even if they seem as big as the universe itself.
I could not have started without the help of my sister. Nikki wasn’t a professional baker. She wasn’t even sure how to frost a cake properly at first. But her heart was in the right place, and her determination was unshakable. She knew how important Cosmic Cakery was to me, and she was ready to dive in headfirst—no matter what it took. I’ll never forget the first few months. We were a two-person team trying to get everything off the ground, and it was a whirlwind. From mixing the batter to decorating cakes , Nikki was by my side every step of the way. We laughed together when things went wrong (and trust me, there were many moments when they did), and we celebrated every tiny win. She was there for the late nights, the stress of opening a new business, and every single chaotic moment in between.
What Nikki brought to the table wasn’t just her support—it was her unwavering belief in me. She encouraged me when I doubted myself, picked up the slack when I needed to take a break, and helped me brainstorm new ideas for the bakery.
When I first opened Cosmic Cakery, I had one big dream: to create cakes and desserts that were as unique and inspiring as the universe itself. I wanted every cake to tell a story, every cupcake to be a moment of joy. But as a new business owner, I didn’t anticipate the challenges of running a bakery all by myself. I quickly found myself overwhelmed with the work: baking, designing, marketing, cleaning, and, of course, managing the books.
The thought of hiring someone crossed my mind many times, but it always came with hesitation. The truth was, I wasn’t sure I could afford it. The bakery was still growing, and every penny counted. What if I hired someone and couldn’t keep them on due to low sales? What if things didn’t work out? I was doing everything by myself, and while it was exhausting, there was also a strange comfort in knowing I had control over every little detail.
But as the orders continued to pour in and the pressure started to mount, I realized something had to change. I was on the verge of burnout, and the quality of my work was starting to suffer. I knew I couldn’t continue this way for much longer. I had to take the leap, even if it scared me.
That’s when John came into the picture.
John wasn’t a typical hire. He didn’t have formal baking experience, but he had a natural enthusiasm for pastry and an incredible work ethic. He had come highly recommended by a friend, and when he walked into my bakery for the interview, I could tell he had the right attitude: passionate, eager to learn, and ready to help. Still, I hesitated. How could I justify hiring someone without knowing if the business could sustain them? What if I made the wrong decision?
Despite my fears, I made the decision to hire John. And honestly, it was the best decision I ever made. From day one, John was a game-changer. He didn’t just help with the baking—he jumped right into the heart of Cosmic Cakery. He learned quickly, always asking questions and showing initiative. The biggest surprise was how John’s fresh perspective sparked new ideas. He was a natural when it came to engaging with customers, making them feel at home while they picked out their cakes. His energy was contagious, and soon, our bakery had a new vibrancy that I hadn’t even realized was missing. I found myself inspired again, ready to push the boundaries of creativity without being bogged down by the logistics of running a business.
And yes, while I was still nervous about the financials at first, the decision to hire John turned out to be the key to unlocking growth. With John handling more of the operations, I was able to focus on refining our offerings, introducing new flavors, and creating even more beautiful, cakes. Customers took notice, and the word spread. Our sales grew, and not only could I afford to pay John, but I was able to reinvest in the business and expand our reach.
Looking back, hiring John was not just an investment in Cosmic Cakery—it was an investment in my own well-being. The weight was lifted, and I no longer felt like I was drowning under the pressure of trying to do everything myself. I could trust that I had someone who was as dedicated to the bakery’s success as I was.
Now, as I watch John interact with our customers and see the growth of Cosmic Cakery, I’m filled with gratitude. He’s become an integral part of our team, and the business is thriving more than ever. I learned that sometimes, the best decisions are the ones that scare you the most. Taking a chance on hiring John allowed me to rediscover the joy in what I do and the freedom to grow.

Today, Cosmic Cakery continues to grow, but our mission remains the same: to make every celebration feel like a journey through the stars. We all face challenges, but looking back would you describe it as a relatively smooth road?
Let’s just say owning a bakery is not a piece of cake, pun intended. There has been long hours, complicated designs, juggling with orders and deadlines. learning how to be a Cake designer, Baker, customer service representative, business owner,manager, accountant, HR, cleaning lady,marketing executive and gopher all at the same time.
During Covid, we had to learn how to scale down our cakes for people who could only have parties of 10. Right now I would say the biggest challenge is the economy and supply cost. Eggs have nearly tripled in price along with every ingredient that goes into baking cakes.
Can you tell our readers more about what you do and what you think sets you apart from others?
At Cosmic Cakery, it’s not just about the cakes. It’s about the experience. We don’t just craft cakes that look beautiful; we create edible works of art that transport our customers to another world.
We specialize in and are known for our custom cakes and cake pops along with our exceptional customer service. We are probably most known for our cake pops in which we have over a dozen flavor varieties daily.
But what truly makes Cosmic Cakery special is the connection we make with our customers. It’s the joy of helping people celebrate their own special moments—whether it’s a child’s first birthday, an engagement party, or a simple gathering of friends. I’ve seen couples tear up over their wedding cake, and children’s faces light up when they see their birthday cake. These moments are what remind me why I do this. Every cake tells a story, and I’m honored to be part of those stories.
I am most proud of how far the name has spread. We have had the honor of making cakes and cake pops for many well-known companies and people. We have done multiple orders for Hulu and Disney+, the San Antonio Spurs, Formula One, and Spectrum just to name a few.
One of the biggest things I would say that sets us apart is we are always up for a design challenge. We go above and beyond for our customers, and our love and passion for our craft shines through every order we fulfill.
We do, although limited also offer a variety of treats in gluten-free and eggless options. Cosmic Cakery also donates to many great causes throughout the year, including but not limited to the Wonder theater the Ronald McDonald House, the San Antonio zoo and the children’s bereavement center. We were featured and had an exhibit in the Doseum. In November of 2019 we also won Star Baker of the great Victorian radicals bake off at the San Antonio Museum of Art.

Can you talk to us a bit about happiness and what makes you happy?
My joy comes from making customers happy. Getting to see them smile and enjoy all the hard work that went into their Cake. The biggest honor is becoming part of someone’s tradition and being able to make multiple cakes for their family over the years. I am also happy that I get to wake up and do a job that I love to do every day surrounded by the best employees ever. SPRINKLES make me Happy!!
